How does one go about forwarding all mail coming to a host, on to another host (basically setting up a global redirect)?

Create /var/qmail/control/smtproutes, with the following text:
:realmailserver.com
This will forward all mail for non-local domains/users to
realmailserver.com.  Alternately, you can say
'somedomain.com:realmailserver.com' to just forward mail for
somedomain.com to realmailserver.com.  See the qmail-remote man page for
more information.
