How do I log client ip adresses, if they comes via a proxy server ?

If I understand your question correctly the short answer is "you can't".
Proxy servers mask the original requesting machine's IP and there is not
way for you to find out what the original IP was.
In any case the original IP would probably be of no use to you since it
would probably one in the private IP range (e.g. 192.168.x.x) which
millions of different people are using. These IP addresses are *not*
unique so two people can share the same IP (they can do this because the
*proxies* have unique addresses).
