Are there any tools (or plug-ins) that work with Apache to provide site statistics (i.e. server load, cool graphing functions, etc). ?

You are thinking SNMP, not Apache. SNMP allows you to monitor incoming,
temperature, memory usage, processor usage, etc.
SNMP coupled with MRTG will allow you to print out all of the graphs you
will need.
I'm not going to explain the details of installing/configuring
SNMP/MRTG, as their developers have already done so at their respective
web sites.

If you are talking about web site traffic analysis, WebAlizer will do it
for you.
